Tomato Pie

4 tomatoes, peeled and sliced
10 fresh basil leaves, chopped (or flakes)
1/2 cup chopped green onion
1 (9-inch) prebaked deep dish pie shell
1 cup grated mozzarella
1 cup grated cheddar
1 cup mayonnaise
Salt and pepper to taste

Directions

Preheat oven to 350 degrees F.

Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.

Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.

To serve, cut into slices and serve warm.

Debbie’s Corn Salad

Ingredients:

2 (15 ounce) cans vacuum packed corn, drained

2 small cucumber slices, for garnish

1 med. diced purple onion

2 small tomatoes, coarsely chopped

1 med. bell pepper

1/4 cup sour cream

2 tablespoons mayonnaise

1 tablespoon distilled white vinegar

1/2 teaspoon salt

1/4 teaspoon dry mustard

1/4 teaspoon celery seed

Directions:

1.) In a large mixing bowl, combine the corn, cucumbers, onions and tomatoes.

2.) Prepare the dressing by whisking together the sour cream, mayonnaise, vinegar, salt, mustard and celery seeds. Add to corn mixture and toss until all ingredients are evenly coated.
