Banana Nut Bread – Super Chef Bread Maker Recipe

INGREDIENTS:

1/2 cup Soft margarine

1 cup Sugar

2 large Eggs

1 cup Mashed, ripe bananas (about 3)

2/3 cup Milk

2-1/2 cups All-Purpose or bread flour

2-1/2 tsp. Baking powder

1/2 tsp. Baking soda

1 tsp. Salt

1/3 cup Chopped walnuts or pecans.

DIRECTIONS:

  1. In a large bowl whisk the first 4 ingredients until well blended.
  2. Stir in remaining ingredients in the above order until well blended.
  3. Spray pan with vegetable cooking spray.
  4. Pour into pan and put pan in machine.
  5. Select #10 setting and press START.
  6. At end of cycle remove from machine and cool in pan 10 minutes.
  7. Remove and cool completely.

Cornbread – Super Chef Bread Maker Recipe

INGREDIENTS:

1/2 cup Vegetable oil

1/4 cup Sugar

2 large Eggs

3/4 cup Milk

3/4 cup Buttermik

1-1/2 cups All-Purpose or bread flour

1-1/2 tsp. Baking powder

1-1/2 tsp. Salt

1-3/4 cups Cornmeal

DIRECTIONS:

  1. In a large bowl whisk the first 5 ingredients until well blended.
  2. Stir in remaining ingredients until well blended.
  3. Spray pan with vegetable cooking spray.
  4. Pour into pan and put pan in machine.
  5. Select #10 setting and press START.
  6. At end of cycle remove from machine and cool in pan 10 minutes.
  7. Remove and cool completely.

Blueberry Bread – Super Chef Bread Maker Recipe

INGREDIENTS:

1/3 cup Soft margarine

  2. Stir in remaining ingredients in the above order until well blended.
  3. Spray pan with vegetable cooking spray.
  4. Pour into pan and put man in machine.
  5. Select #10 setting and press START.
  6. At end of cycle remove from machine and cool in pan 10 minutes.
  7. Remove and cool completely

Grape Nut Bread – Super Chef Bread Maker Recipe

INGREDIENTS:

1 cup  Grape Nut Cereal

2-1/4 cups Buttermilk

1/4 cup Melted margarine

1-1/2 cups Sugar

2 large Eggs

2 tsp. Baking soda

1/2 tsp. Baking powder

3 cups All-Purpose or bread flour

DIRECTIONS:

  1. In a large bowl mix ingredients in a the above order until well blended.
  2. Spray pan with vegetable cooking spray.
  3. Pour into pan and put pan in machine
  4. Select #10 setting and press START.
  5. At end of cycle remove from machine and cool in pan 10 minutes
  6. Remove and cool completely before cutting

Peanut Butter Banana Bread – Super Chef Bread Maker Recipe

INGREDIENTS:

SMALL LOAF (1 Pound)

3 Tbsp. Water

½ cup Mashed, ripe banana

3 Tbsp. Chunky peanut butter *

1 large Egg

1 cup All-Purpose or bread flour

1 cup Whole Wheat flour

1-½ Tbsp. Brown Sugar

1 tsp. Quick-rise or bread machine yeast

MEDIUM LOAF (1-½ Pounds)

1/3 cup Water

¾ cup Mashed, ripe banana

¼ cup Chunky peanut butter *

1 large Egg

1½ cup All-Purpose or bread flour

1½ cup Whole Wheat flour

2 Tbsp. Brown Sugar

1½ tsp. Quick-rise or bread machine yeast

* Substitute regular peanut butter and at fruit/nut beep, add unsalted peanut (¼ cup) for medium loaf or (3 Tbsp.) for small loaf.

DIRECTIONS:

  1. Place all ingredients in the pan in the above order.
  2. Place pan in machine.
  3. Select #8 for small or medium loaves.
  4. If delay option is desired, press ↑ to set timer.
  5. Press START. Bread will be done in the number of hours indicated.

NOTE: A fruit and nut beep sounds about 32 minutes into the cycle.

VARIATION:

Chocolate Peanut Butter Banana Bread

At the fruit/nut beep, add ½ cup of chocolate chips for medium loaf or 1/3 cup for small loaf.

1 cup Granola

½ tsp. Salt

1 Tbsp. Brown Sugar

1 tsp. Quick-rise or bread machine yeast

1/3 cup Toasted, slivered almonds, pumpkin seeds or raisins (Optional)

MEDIUM LOAF (1-½ Pounds)

1 cup + 1 Tbsp. Water

1 ½ Tbsp. Butter or margarine

2 cups All-Purpose or bread flour

1½ cups Granola

¾ tsp. Salt

1½ Tbsp. Brown Sugar

1½ tsp. Quick-rise or bread machine yeast

½ cup Toasted, slivered almonds, pumpkin seeds or raisins (Optional)

DIRECTIONS:

  1. Place all ingredients except raisins and nuts in the pan in the above order.
  2. Place pan in machine.
  3. Select #8 for small or medium loaves.

1/3 cup Raisins

¼ cup Chopped walnuts or pecans (Optional)

MEDIUM LOAF (1-½ Pounds)

1 cup + 2 Tbsp. Water

1-½ Tbsp. Butter or margarine

3 cups All-Purpose or bread flour

2 Tbsp. Skim milk powder

1 tsp. Salt

1 Tbsp. Vegetable oil

3 Tbsp. Dijon mustard

1-½ cups All-Purpose or bread flour

1 cup Rye flour 

1 tsp. Gluten flour *

2 tsp. Brown Sugar

1 tsp. Salt

1-½ Caraway or Dill seeds (Optional)

3 Tbsp. Dried onion flakes (Optional)

1 tsp. Quick-rise or bread machine yeast.

MEDIUM LOAF (1-½ Pounds)

1 cup + 2 Tbsp. Water

1½ Tbsp. Vegetable oil

¼ cup Dijon mustard

2 cups All-Purpose or bread flour

1½ cup Rye flour

1½ tsp. Gluten flour *

1 Tbsp. Brown Sugar

1½ tsp. Salt

2 tsp. Caraway or Dill seeds (Optional)

¼ cup Dried onion flakes (Optional)

1½ tsp. Quick-rise or bread machine yeast.

DIRECTIONS:

  1. Place all ingredients in the pan in the above order.
  2. Place pan in machine.
  3. Select #4 for small loaf; select #5 or #6 for medium loaves.
  4. If delay option is desired, press ↑ to set timer.
  5. Press START. Bread will be done in the number of hours indicated.

NOTE:

  1. This cycle has a 30 minute delay before mixing to warm the ingredients.
  2. A fruit and nut beep will sound about 32 minutes into the cycle.

VARIATIONS:

Beer Rye Bread: Omit Dijon mustard and water, ; substitute beer (3/4 cup + 2 Tbsp.) for small loaf and (1-1/3 cups) can or bottle for a medium loaf.

* Gluten flour improves the volume and texture when using flour such as rye which is low in gluten. It is available in natural and bulk stores but if unavailable add extra 1/2 tsp. yeast.
