Easy Oatmeal Muffins


1 1/2 c. any Aunt Jemima pancake mix
1 c. uncooked Quaker oats
1/2 c. packed brown sugar
1 1/2 tsp. cinnamon
1 c. milk
1 egg
1/4 c. vegetable oil
1/2 c. peeled, chopped apple
1/3 c. raisins

Blueberry Muffins

2 c. all purpose flour

1 Tbsp. baking powder

1/2 c. sugar

1 tsp. salt

1/3 c. oil

1 egg, well beaten

1-1/4 c. milk

1/2 c. blueberries



Healthy Banana Bread


1/2 c. shortening or salad oil
1 c. brown sugar (or 1/2 c. honey & 1/2 c. brown sugar)
3 med. size ripe bananas, mashed
2 beaten eggs
1 1/2 c. 100% whole wheat flour
1/2 c. wheat germ
2 tsp. baking powder


Cream shortening and sugar. Add bananas, vanilla and eggs. Combine remaining ingredients and add to first mixture. Stir only until mixed well. Bake in well greased loaf pan at 325 degrees for 1 hour, 10 minutes or until browned and crusty. Chocked full of nutrition. My kids love this too!
